In most parts of the country, Spring is here to stay. Spring begins to creep into the Lowcountry somewhere around the end of February and has gotten quite comfortable by the time the calendar makes it official. During my time in Minnesota, it once snowed on Tax Day and yes, I did cry.
In many parts of the country, April means the return of the Farmers Markets and a return to green and tender produce. If it’s not already a habit, why not set a goal of at least twice a month trying produce that is in-season.

Just as a note, fresh peas are quite delicate and if you won’t be using them within two days of purchase, they should be blanched and frozen. Blanching simply means to boil them briefly, only for a minute or two, then stop the cooking process by running the peas under cold water. Spread the peas on a baking sheet and freeze. Once the peas are frozen, bag them in a freezer bag.

No, you didn’t miss March, both Cameron and I’s schedules went nuts and we didn’t get it done in time. We’re hoping the next 8 months are slightly more forgiving. March and February are pretty similar in available produce.
