Dear Home Ec 101,

We do a big spread on Christmas Monring – Eggs benedict, cinnamon rolls, bacon, french toast, fresh fruit, etc. This year I wanted to try and do as much as I can ahead of time. Can I can make the french toast a day or two earlier, and what would be the best way to do it?

Yup, you got it and I’ve got two methods for you.

You can get away with making your French toast ahead of time. Go ahead and cook it fully, then place it on a baking sheet and freeze quickly. Once frozen completely, place it in a freezer bag. You may want to use squares of wax paper to keep the pieces separate. The morning of, you can heat it in a toaster oven or the regular oven, you’ll need to turn it once.

You can also freeze French toast after soaking the stale bread it in the batter, but without cooking it. Just make sure that the sheet you freeze it on has been buttered or greased. Freeze it for about 45 minutes and then transfer the frozen French toast to an air tight container. Too cook, simply place the frozen french toast on a baking sheet and bake at 425°F for 8 minutes, then turn and bake for an additional 10 – 12 minutes.

  1. Concur with Emily above. There is an AWESOME recipe here from the Smitten Kitchen: the booze can easily be omitted or swapped with vanilla extract. Hawaiian bread is perfect for this recipe if your grocery store doesn't have actual brioche.
